COFFEE CUP CORNBREAD

INGREDIENTS

1 lb. butter, unsalted

5 cups cornmeal

3 ¾ cups flour

5 Tbsp. sugar, granulated

7 ½ Tbsp. baking powder

2 ½ tsp. baking soda

1 ¼ tsp. kosher salt

10 large eggs, lightly beaten

7 ½ cups buttermilk

1 can pimentos, diced

DIRECTIONS

Preheat oven to 300 degrees. In a large bowl, add dry ingredients (cornmeal, flour, sugar, baking powder, baking soda and salt). In a separate bowl, add eggs, buttermilk and butter. Combine mixtures and fold together so there are no dry spots. Pour batter into cups. Bake for 30 minutes until tops are golden brown. Enjoy!
