Local Recipe: Bacon-Wrapped Filet Mignon By Fredericksburg Cast Iron Company

BACON-WRAPPED FILET MIGNON

Ingredients

4 thick slices of apple wood bacon

4 8-10 oz. Filet Mignon Salt and pepper to season

4 tablespoons of salted butter

1 garlic clove peeled Twine or tooth pick

2 tablespoon grape seed oil

Instructions

Wrap filets with bacon and secure with twine by wrapping and tying or by inserting a tooth pick at the end of the bacon wrap.

Season with salt and pepper.

Sear & Roast

Preheat oven to 400°F

In skillet, heat oil and butter on medium - high heat until butter turns brown. Sear filets 1 minute on each side. then turn filet on the bacon side and roll it in hot pan for one minute more. Roast in oven 5-8 minutes for medium rare. Adjust cooking time for desired doneness.

SAUTEED GREEN BEANS WITH GARLIC AND ALMONDS

Ingredients

1 pound fresh green beans - ends trimmed

1 tablespoon sesame oil

1 tablespoon olive oil - sub additional

1 tablespoon sesame oil

1 teaspoon salt - or to taste

1/2 teaspoon black pepper - or to taste

2 teaspoons minced garlic

2 teaspoons brown sugar

I cup shaved, sliced, or slivered almonds

Instructions

Make sure the beans are patted dry, then add to a large skillet along with oil. Saute over medium heat 1-2 minutes. Add garlic, salt, pepper, brown sugar, and almonds. Saute 10 minutes or until green beans are easily pierced with fork. Allow to cool slightly before serving.
