GORGONZOLA MAC & CHEESE
INGREDIENTS
2 cups milk
2 oz. butter
¼ cup flour
¼ cup onion
1 tsp. garlic
6 oz. blue cheese
4 oz. mozzarella, shredded
4 oz. fontina, shredded
8 oz. Parmesan
¼ tsp. salt pinch white pepper
1 lb. macaroni, precooked
8 oz. mozzarella, shredded
DIRECTIONS
Mince onion and garlic. Heat milk in a small pot until boiling. In a large pot, slowly sweat the garlic and onion until soft and add flour, salt and pepper. Transfer hot milk into the garlic and onion roux and heat until it thickens. Remove from heat and slowly add in cheese while mixing to incorporate. Add cooked macaroni to the cheese sauce and place in a baking pan. Top the macaroni with mozzarella cheese and bake until golden brown.
