In early 2001, entrepreneur Michael Collins’s foresight into the real estate market landed him in Midtown, where he saw an opportunity to catch the “wave” of one of Houston’s newest hot spots. With a loan from his father, he opened The Fish. As one of the first contemporary sushi restaurants in Midtown, its location inside of a unique mixed-use space spoke to Collins' distinctive architectural design style, coupled with his excitement for exotic foods. The Fish has been a neighborhood staple in Midtown and recently celebrated its 20th anniversary with a festive celebration to mark the momentous occasion. As someone who’s always looking for potential business opportunities, Collins observed that there was actually a need for more options when it came to sushi in his own area of town. When the space that was previously occupied by Jenni’s Noodle House became available, he jumped at the chance to open another neighborhood spot for sushi lovers but this time, closer to where he lives.

Located at 2027 Post Oak, SOPO (short for Sushi On Post Oak) also gave Collins yet another opportunity to showcase his passion for design, so with the help of architect Isaac Preminger, he was able to create a fun and inviting space, unique to the eye.“Our goal with SOPO is to be your neighborhood sushi bar,” said owner Michael Collins. “Our sister restaurant The Fish has some of freshest seafood in the city, and SOPO provides our guests with that same caliber of cuisine,” added Collins. As you enter the 2500 square foot space, you’re greeted with an Insta-worthy bright pink neon sign “Here For The Sushi” coupled with a laid back vibe, perfect for a lunch with coworkers, as well as date night. The covered patio provides ample outdoor seating for alfresco dining. SOPO’s menu features a diverse selection of sushi rolls, along with small shareable plates, like the Lobster Crab Puffs and Pork Gyoza’s. Patrons can expect inventive cocktails made with premium spirits such as Ilegal mezcal, as well as sake and authentic Japanese whisky. Some of the popular specialty rolls include The Volcano roll, which is lit on fire and delivered to your table, providing a bit of spice and the perfect balance of heat and savory.

Patrons can enjoy happy hour Monday through Saturday from 2pm-6pm and all day on Sunday. SOPO also offers a variety of non-sushi alternatives like the Miso Cod and BBQ Short Ribs, which are offered as part of the lunch bento box specials available Monday through Friday from 11am to 3pm. Shortly after opening SOPO, Collins debuted Ducky McShweeney’s Irish Pub next door, as well as an event space connected to Ducky’s called Toque. All three venues have been very well received by the neighborhood since opening, and they seem to be filling a niche for the Galleria area.
