Georgia James Restaurant is On Our Mind

Robin Barr Sussman | December 7, 2018 | Food & Drink

Cozy up at Chris Shepherd’s new concept for a juicy steak and a sleepy, yet, welcoming ambiance. Meet Georgia James.

This fall, to much anticipation, chef Chris Shepherd opened Georgia James in his former Underbelly space, now refreshed with art deco touches and a sleek bar. “I [want it] to be a similar experience to dining at my house—the way we cook the steaks (seared in cast iron or cooked over a wood-fired grill), the music, and impeccable service and attention to detail,” says Shepherd. Named for both of his parents, the new concept spotlights Shepherd’s version of a steakhouse, with chophouse and raw bar indulgences. High-end steaks from 44 Farms—such as 100-day dry-aged, bone-in ribeye and wet-aged porterhouse—star on the menu. Gussied-up American extras include cornbread custard, sweet potato white cheddar gratin and creamed collard greens. Dry-aging and curing rooms up the ante for menu temptations like pulled king crab with sweet mustard remoulade, Gulf oysters with bourbon hot sauce butter, and bacon sausage and hash browns with Fresno chili. Don’t even think about skipping dessert: The famous 1½-pound apple pie with cheddar ice cream is waiting for you and your friends. 1100 Westheimer Road, 832.241.5088
